Swillhouse is a house of venues united by a deep love for hospitality — the kind that’s felt more than it’s seen. The kind that surprises you, stays with you, and brings people back, time and time again. Since 2008, we've built places that offer more than just food and drink but offers a feeling. Something unexpected, transformative and above all, real.
This is a business born not from boardrooms but from bartenders. From grassroots ambition, gut instinct and a belief in lunches that turn into the unexpected and better nights out. From the moment Shady Pines served its first whisky apple in 2010, we’ve done things our own way, pushing boundaries, making memories, and redefining what hospitality in Sydney could be. Every venue since has continued this tradition, each one an original, but all connected by a clear vision: devoted hospitality, Originality, and a Good Time, always.
And while a lot has changed since we first opened our doors, the idea that started it all remains the same: regular people giving their all to make spaces in the city where extraordinary things can happen.
